Pueblo Abierto is an Argentine concept that brings chefs together, who cook and discover regional tastes and flavors. The best Argentinian chefs are in touch with small producers, who give them direct access to the best and most exclusive products.
Last May, I was invited to the Argentinian North edition, in a little village called Cachi. It was a wonderful experience; a true journey into regional tastes, and an opportunity to connect with simplicity and authenticity. Delfina Magrane, who imagined this beautiful project, likes for people to mingle and feel confortable! Her goal is to develop Pueblo Abierto in every region, giving the chance to discover the flavors that this huge and beautiful country has to offer.
The weekend in Cachi was marked by:
- Cooking classes
- Visiting local markets and discovering new spices, teas, fruits and vegetables, and regional food : tamales, empanadas…
- Friendly meals : dinners in bodegas, a brunch prepared with all the chefs, and a regional dinner with homemade sausages and cheeses in Payogasta (typical village near Cachi)
